EL COMAL

The Spanish tortilla is one of El sr J's favorite back-up meals when we don't have a lot of time, come home late, don't feel like discussing dinner at breakfast, etc.


Unfortunately, his batterie de cuisine. . .

is still in Alabama.

 This would include his beloved poelle.
Note the metal handle.  He's been unable to make a satisfactory tortilla here because the handles on the two pans we bought are plastic and wood.  Turning the tortilla over on top of the stove did not produce a satisfactory outcome.

Then we considered the comal, which comes in many sizes and is used to make Mexican tortillas, a totally different dish.  It worked just fine, especially since our stove has a griddle in the middle.  Just finish off the top under the broiler, and buen provecho.
