ROJO, VERDE Y BLANCO

A pre-Independence Day dinner.  I'll let el sr J describe it since he made it.


The fish--broiled in an olive oil-butter mixture, sauced with white wine and lime juice, and topped with roasted garlic--is mero (grouper); the asparagus is steamed and sauced with white wine and dry mustard, and the pasta is berenjena (eggplant) parmigiana in a red wine sauce with roasted tomatoes and pasilla peppers.
